Champagne Goustan Brut Nature 2017, Pinot Noir
Non-vintage, fermentation with indigenous yeasts, élevage for 6 months in used barriques, spontaneous malolactic fermentation, 19/22 months on the yeasts, unfiltered and unclarified. Brut Nature not dosed. Tense
and nervous, long and very dry. It enters the thin mouth then begins to elbow. Very persistent.
Champagne L’Eclos de la Cote 2015, Pinot Noir
Plotted cuvée from the lieu-dit les Clos de la Côte, with 45-year-old vines and clay and limestone soils. Elevage sur lie for 8 months in barrels and then two years and six months of second fermentation in the bottle. Indigenous yeasts, spontaneous malolactic fermentation, no filtration. Grapes harvested in 2015, dégorgement in November 2018, no dosage.
