Solouva Open by Azienda Agricola Solouva was born from the desire to explore new horizons in traditional-method sparkling winemaking through the application of the SoloUVA method in the heart of Oltrepò Pavese. Made exclusively from 100% Pinot Noir, this sparkling wine represents the meeting point between winemaking tradition and innovative production techniques, highlighting one of Italy’s most renowned regions for fine sparkling wines. Extended aging on the lees and a second fermentation carried out without the addition of exogenous sugars result in an authentic, vibrant wine that remains deeply connected to its raw material. Fresh, dynamic, and immediately recognizable, Solouva Open expresses a modern personality while preserving elegance and balance. It is a sparkling wine that captivates with its precision on the palate and an irresistible drinkability that encourages sip after sip.
The Story of the Wine
The idea of producing a traditional-method sparkling wine according to the SoloUVA philosophy in Oltrepò Pavese has its roots in a curiosity cultivated by Azienda Agricola Solouva for many years. However, the project only took concrete shape in 2020, during a particularly challenging period marked by profound changes. The goal was to transfer the company’s production philosophy to a territory beyond Franciacorta, identifying Oltrepò Pavese as the ideal area to showcase the potential of Pinot Noir. The vineyards are located in Borgo Priolo, in the province of Pavia, an area historically recognized for its suitability for this grape variety. From this vision came Solouva Open, a label that interprets its territory through a contemporary style and a strong sense of identity. It is a project that demonstrates how innovation and tradition can coexist in perfect harmony.
Vineyard Philosophy
The grapes come from approximately four hectares of mature vineyards located on the hills of Borgo Priolo, trained using the Guyot system and benefiting from southern and south-western exposure. These conditions promote optimal ripening of the Pinot Noir grapes, producing fruit rich in aromas and characterized by an excellent balance between freshness and concentration. The vineyard philosophy is centered on enhancing the quality of the raw material and expressing the authenticity of the terroir through careful vineyard management and meticulous grape selection. The objective is to preserve integrity, freshness, and varietal identity, all essential elements in crafting a sparkling wine with character. The combination of favorable exposure, viticultural expertise, and respect for the vine’s natural cycle contributes to defining the distinctive style of Solouva Open. It is a wine born from the belief that true quality begins in the vineyard.
Cellar Approach
Winemaking begins with a first fermentation in stainless steel tanks, a choice that preserves the aromatic purity of Pinot Noir and highlights the freshest and most vibrant characteristics of the fruit. The wine then undergoes a second fermentation in bottle according to the SoloUVA method, without the addition of exogenous sugars, ensuring complete consistency with the winery’s production philosophy. Aging on the lees continues for at least 20 months, during which the wine develops complexity, depth, and a more refined texture. The aim is to create a sparkling wine that is precise and dynamic, capable of combining tension, elegance, and immediacy. Every winemaking decision is designed to enhance both the character of Pinot Noir and the unique qualities of the territory. The result is an authentic, contemporary traditional-method sparkling wine with a strong and distinctive identity.
Tasting Notes
Colour: Pale golden yellow, bright and luminous, enhanced by a fine and persistent perlage.
Nose: Aromas of lemon-infused strawberries enriched by delicate spicy nuances reminiscent of a light dusting of cinnamon.
Palate: Dry, incisive, and immediate, with freshness supported by balanced acidity; fresh red fruit returns on the palate alongside hints of black pepper and a persistent mineral tension that carries through the finish.
