The grapes come from a varied soil made of shale, quartz and gray marl, the grapes are pressed full bunch, i.e. whole bunch, spontaneous fermentation and aging in steel
White flowers and lots of citrus fruits, pineapple and white peach, menthol and herbaceous hints, mineral returns with hints of hydrocarbon
Fresh and very mineral, very elegant and medium-bodied, long with a citrus finish

Yoshiaky Sato and his wife Kyoko met during their respective assignments for a Japanese banking group operating between Tokyo and London; they were both hired in 1998 but only met many years later, in time to decide to fly together to New Zealand to produce wine. They later graduated in agronomy and oenology in Christchurch and settled in Central Otago where they founded their company, Sato Estate
