In the village of Nothalten (Alsace), the Meyer family works with biodynamic and holistic methods: no synthetic treatments, spontaneous fermentation, and zero filtration. The wine is aged for at least 12 months on fine lees in cement tanks, gaining complexity and balance while preserving energy and precision.
