In the vineyard: patience and limestone
Cabernet Sauvignon vines grow among the dry winds and stony soils of Ciociaria, deeply rooted in the ancient limestone known as “Puddinga”, which gives this wine its name. It’s a demanding terroir that rewards care and humility. Farming here is manual, natural and instinctive, guided by the seasons and a deep respect for the land. There’s no herbicide use, pruning is careful, and yields are kept low — allowing the vineyard to speak for itself.
In the cellar: time and matter
Harvested at full ripeness, the grapes ferment spontaneously in open vats, with 10–12 days of maceration and daily manual punchdowns. After completing malolactic fermentation in steel, the wine is moved to Tava amphorae, where it rests for two years without interference. The amphora isn’t just a vessel — it’s a symbol of essentiality and integrity, echoing the stone that surrounds the roots. The result is a deep, vibrant wine that proudly resists standardization.
Tasting notes
Deep ruby red color with garnet hints.
On the nose, it offers complex notes of wild berries, Mediterranean herbs, leather and balsamic tones.
On the palate, it’s fresh, firm and vertical, with refined tannins and a long, harmonious finish.

Fermentations occur spontaneously, without additives or technological interference, allowing each vintage to express itself freely. Wines are vinified in steel, concrete, or fiberglass tanks, and aged slowly according to their natural rhythms. No filtering or fining is applied, and sulfur is used only in minimal quantities, if at all. The resulting wines are alive and authentic, with a distinctly Tuscan voice — sincere, rustic, yet always elegant.
