Spontaneous fermentation in concrete with native yeasts and maceration on the skins for two weeks, refinement takes place in non-first passage barriques for 6 months. Bottled without clarification or filtration or added sulfur dioxide, it rests here for 18 months before being released on the market.
Pink and purple with lots of ripe red fruit, hints of undergrowth and notes of dark spices, tobacco and mineral returns
Full and generous, very fresh and with good flavor, the tannin is gentle and the finish is long

Lari, Tuscany
Marta Sierota grew up between Poland and France, and among the fondest memories of her childhood there was the period in which she ran around among her grandfather’s vogne as a child. It must have been love at first sight because today Marta is a talented producer.
In France he graduated in philosophy and also taught it, but in 2008 he moved with his family to Tuscany, where he purchased a 17 hectare estate, of which 6 are under vineyards.
Marta’s production idea is absolutely natural as she believes wine is the result of the interaction between man and nature. In the vineyard he applies the principles of biodynamics, an approach that reflects his way of being and relating to the world. He sees the soil as the origin of everything.
In the cellar, human interventions are reduced to a minimum, the grapes are pressed with the feet or with a hand press, fermentation is always spontaneous in concrete, without temperature control. The wines of Podere Anima Mundi are neither clarified nor filtered, and only to the whites is a very small dose of sulfur dioxide added, the content of which in any case never exceeds 25 mg/l.
The company wines are all single-varietal, to best reflect the terroir of the Pisan Hills. Elegant and delicate, because Marta doesn’t like extremism or even excessively marked defects: she doesn’t love brett!
