Follia Bianco – Piana dei Castelli
An explosion of creativity and terroir
Follia Bianco is the freest and most visionary expression from Piana dei Castelli. A wine born from the idea of interpreting white wine in a totally unconventional way, with no compromises, following only the instinct of the winemaker and the rhythm of nature. Through this project, Matteo Ceracchi tells the story of the volcanic soils of the Castelli Romani and the vitality of local grapes, bringing all the energy of an ancient and vibrant territory into the glass.
Vineyard
The grapes come from parcels scattered across the eleven municipalities where the estate is located, selected for their exposure, altitude, and soil composition. Basalt and pozzolana dominate these terrains, giving the wine a unique mineral tension. The viticultural practices are organic and biodynamic, with extreme attention to soil vitality and full respect for natural cycles.
Winemaking
Spontaneity rules in the cellar. Fermentation occurs without the addition of selected yeasts and without temperature control, allowing the wine to find its balance naturally. Follia Bianco undergoes long skin contact, like the greatest orange wines, and is aged in terracotta amphorae and cement vats. No filtration, no fining: only time, patience, and respect for living matter.
Tasting notes
In the glass, it shows an intense golden color, crossed by amber highlights that hint at its complexity. The nose is deep, with notes of candied citrus, medicinal herbs, chestnut honey, and a mineral echo that invites further exploration. On the palate, it is powerful yet balanced, with a subtle tannic texture, vibrant freshness, and a savory profile that makes it endlessly drinkable. The finish is long, layered, and constantly evolving.
Food pairings
Follia Bianco is a wine for those who love to dare at the table. Perfect with rich and spicy dishes, braised white meats, aged cheeses, and Asian cuisine. Also excellent with pumpkin-based recipes, porcini mushrooms, and saffron dishes.

📜 History and Philosophy
The Ceracchi family has been active in the wine sector since the early 19th century in Velletri, in the heart of the Castelli Romani. Matteo Ceracchi, an oenologist trained in San Michele all’Adige, founded Piana dei Castelli as an independent project, combining family tradition and personal experimentation. The winery spans eleven municipalities, with vineyards located at various altitudes on volcanic soils rich in basalt and tuff.
🌱 Viticulture and Winemaking
The winery adopts biodynamic and organic practices, avoiding the use of chemical products. In the cellar, fermentations are spontaneous, without the use of selected yeasts, and the use of sulfites is minimal. The goal is to produce wines that reflect the authenticity of the territory and the cultivated grape varieties.
