Piana dei Castelli Bianco
A journey through the colors and aromas of Lazio
Among the volcanic hills of Velletri, Piana dei Castelli Bianco represents the very essence of Matteo Ceracchi’s philosophy: absolute respect for nature, pure expression of the land, and an unceasing pursuit of quality. This is not just a simple white wine, but the result of a deeply rooted family tradition, reinterpreted with contemporary sensibility and a biodynamic vision.
Vineyard
The grapes come from vineyards located north of Velletri, at altitudes that ensure significant temperature variations between day and night. The soils, composed mainly of volcanic tuff and clay, give the wine a distinct mineral character and a vibrant energy.
Winemaking
In the cellar, everything follows the rhythm of nature. Fermentations are spontaneous, driven solely by the indigenous yeasts found on the grape skins. The must undergoes a cold maceration for about 12–24 hours to extract aromas and structure, while aging takes place exclusively in cement tanks, where the wine rests on its fine lees for at least 12 months. No filtration, no clarification, no stabilization: every bottle tells the story of an uncompromised vintage.
Tasting notes
In the glass, it displays an intense straw yellow color with golden reflections, immediately capturing the light and the eye. The nose reveals elegant floral notes, ripe yellow fruit hints, and a clear mineral trace, the unmistakable hallmark of its volcanic origins. On the palate, it impresses with its freshness and sapidity, supported by a robust structure and a long, captivating finish that invites another sip.
Food pairings
Versatile and refined, it pairs beautifully with structured fish dishes, shellfish, fresh cheeses, and vegetarian recipes. This is a white wine that stands up gracefully to important meals, enhancing them with discretion and depth.

📜 History and Philosophy
The Ceracchi family has been active in the wine sector since the early 19th century in Velletri, in the heart of the Castelli Romani. Matteo Ceracchi, an oenologist trained in San Michele all’Adige, founded Piana dei Castelli as an independent project, combining family tradition and personal experimentation. The winery spans eleven municipalities, with vineyards located at various altitudes on volcanic soils rich in basalt and tuff.
🌱 Viticulture and Winemaking
The winery adopts biodynamic and organic practices, avoiding the use of chemical products. In the cellar, fermentations are spontaneous, without the use of selected yeasts, and the use of sulfites is minimal. The goal is to produce wines that reflect the authenticity of the territory and the cultivated grape varieties.
🍇 Cultivated Grapes
Piana dei Castelli cultivates a variety of indigenous and international grape varieties, including:
Indigenous varieties: Grechetto, Cesanese, Malvasia Puntinata, Sangiovese, Trebbiano Giallo.
International varieties: Sauvignon Blanc, Riesling, Merlot, Montepulciano, Pinot Grigio.
🍷 Distinctive Wines
Among the wines produced:
Follia Bianco: a blend of white varieties, vinified in concrete.
3 Trebbiano: Trebbiano Giallo, vinified and aged in concrete.
Rosso: a red wine from local varieties, spontaneously fermented.
Out Rosé: a fresh and fruity rosé.
