In the cellar, Ferlat takes a gentle approach: a short maceration on the skins to extract color and texture, spontaneous fermentation in steel, and aging on fine lees to add depth and aromatic harmony. Sensory analysis
The color is a bright, coppery pink with soft orange reflections reminiscent of a sunset. Each wine aims to reveal the true nature of the grape (Friulano, Malvasia Istriana, Merlot, Refosco, Pinot Grigio, Sauvignon) through spontaneous fermentations, minimal intervention maceration, and ageing in steel or large wooden casks, depending on the character of the fruit.
