Corvagialla Pet-Nat Bianco 2021: volcanic freshness in an ancestral key
Corvagialla’s Pet-Nat Bianco 2021 is a pure and vibrant expression of the volcanic Tuscia territory, crafted through the ancestral method. Made from 100% Roscetto grapes, it captures the untamed energy of this native variety in a bottle-fermented sparkling wine that is fresh, sincere, and gastronomic.
In the vineyard and the cellar
The grapes are farmed without synthetic chemicals on volcanic soils rich in minerals. After a short one-day maceration, they’re softly pressed, and spontaneous fermentation begins. Bottled at the end of fermentation, the wine completes its process in the bottle. Disgorged in January 2022, it is aged in fiberglass tanks and left unfiltered and unfined.
Tasting notes
Colour: lightly hazy golden yellow with a lively natural fizz.
Nose: fruity and floral, with hints of yellow apple, lemon zest and subtle yeasty notes.
Palate: dry, crisp, and lively, driven by a refreshing acid-savory backbone that gives structure and drinkability.
Pairings
Ideal as an aperitif, it pairs well with seafood crudo, crunchy salads, soft cheeses and vegetable dishes. Excellent with light pasta or fried fish.

Corvagialla: agricultural freedom and living wines from Alta Tuscia
Corvagialla is a small agricultural and wine estate located in Castiglione in Teverina, in the heart of northern Lazio’s Alta Tuscia. Here, not far from the Umbrian border, Tommaso Gallinari has created a rural project that is first and foremost a way of life. Corvagialla is a place to live and farm naturally, without forcing rhythms, in deep connection with landscape and time. Wine here is not a product, but an agricultural act—free, spontaneous, and tied to its soil.
Vineyard philosophy and winemaking approach
The vineyards grow on volcanic, tufaceous soils at around 450 meters above sea level. Farming is manual, with no chemical treatments, herbicides, or irrigation. Local varieties like Procanico, Malvasia, Verdello, and Ciliegiolo are grown alongside vegetables, fruit trees, olive groves, bees, and forest. Biodiversity is part of the project’s core, as is a vision of low-impact, respectful agriculture.
In the cellar, the process remains artisanal: spontaneous fermentation, no clarification or filtration, and zero additives. Wine matures in neutral materials such as concrete or fiberglass, preserving the grape’s integrity. Each wine is unique, shaped by the vintage, the parcel, and the hands behind it.
Style and identity
Corvagialla’s wines are vibrant, pure, and unconstrained. The whites—often with light maceration—are floral, saline, and vertical. The reds are lean, juicy, and bright. Their beauty lies in their sincerity and coherence with place. Corvagialla does not follow external trends, but builds itself slowly and thoughtfully, in rhythm with nature.
