At the time, this choice was groundbreaking: while the Chianti Classico regulations required the use of other grape varieties in blends, Montevertine opted for 100% Sangiovese, thereby relinquishing the official designation. This philosophy of purity and authenticity continues today under the leadership of his son, Martino Manetti.
Grape Composition
Le Pergole Torte is made exclusively from 100% Sangiovese, selected from the finest vineyards of the estate. The yield is approximately 40 hectoliters per hectare, ensuring limited production and a high concentration of aromas.
Vinification and Aging
The vinification process of Le Pergole Torte is characterized by meticulous care at every stage:
- Alcoholic fermentation: takes place in cement vats for about 25 days, allowing for a delicate and complete extraction of the aromas and structure of the Sangiovese grape.
- Malolactic fermentation: also occurs in cement vats, helping to soften the acidity and give the wine a smoother texture.
The aging process is carried out in two distinct phases:
- 12 months in barriques (small French oak barrels) to develop complexity and depth.
- 12 months in Slavonian oak casks, which impart elegance while preserving the freshness of the fruit.
After bottling, the wine rests for about 3 months in the bottle, completing its maturation process before being released on the market.
Le Pergole Torte is bottled with sulfur dioxide levels below 60 mg/liter, maintaining a philosophy of natural winemaking that respects the purity of the fruit.
