Roots in the Piedmont tradition
The choice to vinify Grignolino highlights ValdiSole’s mission to give new life to a historic variety often underestimated but rich in character. The vineyards are cultivated with artisanal, sustainable methods, always respecting the environment and biodiversity. Grapes are hand-harvested to preserve their integrity and carefully selected to ensure only the best clusters are used. In doing so, the winery creates a wine that reflects the soil and climate of its territory with purity and authenticity, free from technical manipulations and artificial enhancements.
Natural winemaking process
In the cellar, minimal intervention guides the entire process. Fermentation is spontaneous, driven by native yeasts naturally present on the grape skins. The must remains in contact with the skins for 6 days in stainless steel tanks, a maceration that gently extracts aromas, tannins, and color without excess. The wine then matures for 9 months in stainless steel, preserving its freshness and clean profile. No filtration is carried out, and only a very small addition of sulphur dioxide (20 mg/L) is made at bottling, ensuring stability while respecting the integrity of the wine.
Sensory profile
Visually, Panta Rhei 2024 shows a pale, luminous ruby red, light yet bright, a signature of Grignolino. On the nose, it reveals fruity notes of cherry, raspberry, and red berries, with delicate spicy nuances adding depth and refinement. History
Founded in 2015 on the Roero hills in Corneliano d’Alba, in the heart of Langhe, Roero and Monferrato, ValdiSole Winery is located in a UNESCO World Heritage Site. The winery began with a small abandoned Nebbiolo vineyard purchased online and has gradually expanded with both young and old vines. All vineyards are situated in the DOCG Roero area, primarily in the Valdistefano denomination, ensuring high-quality grapes and a strong connection to the territory.
Philosophy
ValdiSole follows strict natural practices, without synthetic chemicals or enological forcing. The winery’s philosophy emphasizes authenticity and essentiality, using only the grape as the core ingredient. Wines are produced in a style that blends regional tradition with innovative techniques adapted from other parts of the world, resulting in distinctive aromas, colors, and profiles.
Wine Characteristics
