No.1 Classic Method Sparkling Wine 2020 is made from carefully selected grapes, pressed immediately in the vineyard after harvest to preserve freshness and prevent deterioration. Alcoholic fermentation is controlled at 18°C to retain the primary aromas, giving the wine elegance and finesse. The secondary fermentation takes place in the bottle following the classic method, the same technique used for the world’s finest Champagnes, ensuring superior quality and refined bubbles.
Vineyard Philosophy: Limestone Soils and Historic Vines
The vineyards for No.1 are located on the eastern Slovenian hills along the Sava River, characterized by limestone soils and steep slopes. The vines, aged between 20 and 25 years, grow in narrow, windy hill valleys that create an ideal microclimate for producing healthy, high-quality grapes—essential for an excellent sparkling wine.
Winery Approach: Classic Method and Artisan Care
The winemaking process involves fermentation in stainless steel at 18°C to preserve aromatic freshness. Then, the secondary fermentation happens in the bottle, following the classic method, with extended aging on lees to add complexity and structure.
