Markus Scholtes selects grapes from vines averaging 45 years old, ensuring concentration and elegance in every bottle. With only 0.21 hectares dedicated to this Kabinett, the wine represents the highest expression of the family’s viticultural tradition, combining centuries-old practices with modern winemaking techniques.
Vineyard Philosophy
Markus Scholtes practices careful and thoughtful viticulture, focusing on low yields and optimal ripening to preserve the unique character of the Riesling. The vines grow on steep slate soils, which provide minerality, tension, and aromatic complexity. Manual harvesting guarantees that only the healthiest and most mature grapes are used, reflecting the precision and respect for the terroir.
Winemaking Approach
The wine undergoes spontaneous fermentation in traditional foudres and used barriques, with no fining and 4–6 months aging on fine lees in the same vessels. This method enhances depth, texture, and aromatic precision. No selected yeasts or additives are used, and a small addition of SO2 ensures stability. Limited production of 500 bottles makes this Kabinett particularly rare and exclusive.

Markus Scholtes, the third generation of winemakers, inherited the family passion and honed his skills alongside his father from an early age. He trained at St. Urbans-Hof under master Nik Weis and later studied viticulture and enology at Geisenheim University, further enriching his professional experience by collaborating with internationally renowned wineries.
Vineyard Philosophy
