The Mormaj Pecorino Amphora is a unique white wine crafted in Tocco da Casauria, Abruzzo, Italy, from 100% Pecorino grapes. Made with a natural approach, this wine undergoes manual harvest and a one-week maceration in amphora, where fermentation occurs spontaneously with native yeasts. It is then aged for at least 9 months in amphora before bottling.
The result is an elegant and vibrant wine, showcasing intense herbal and floral aromas, combined with a clean, fresh, and savory palate that makes for an incredibly drinkable experience.

Winemaking Process 🏭🔬
The Pecorino grapes are hand-harvested and undergo a one-week maceration in amphora, allowing for a delicate extraction of aromas and structure. Fermentation takes place spontaneously using native yeasts, preserving the wine’s authenticity and connection to the land.
The wine is then refined for at least 9 months in amphora, developing depth and complexity before being bottled with minimal intervention.

Founded in 2015, Mormaj was born in the heart of Abruzzo, between the majestic Morrone and Majella mountains. This ambitious project comes from the vision of two entrepreneurs, Andrea and Francesco, who, despite living far apart (Andrea from Monza and Francesco a native of Tocco di Casauria), share the same passion and philosophy for authentic winemaking.

Winemaking Process 🏭🔬
At Mormaj, nature takes the lead. The vines are cultivated with minimal use of sulfur and copper, respecting the land and its biodiversity. The fermentation process is entirely spontaneous, relying on native yeasts, preserving the purity and authenticity of each grape variety.
The wines contain a total SO₂ content of less than 50 mg/liter, ensuring a clean and natural expression.
For aging, the winery uses steel tanks and concrete vats… and an exciting new surprise is on the way! 🍷✨
