Philosophy in the vineyard
The vineyards lie between 450 and 550 meters above sea level, on stony limestone soils with excellent drainage. Farming is strictly manual and biodynamic, without any chemical fertilizers or synthetic treatments. The goal is to enhance soil vitality and preserve the balance of the ecosystem. Yields are kept low, and harvest is done by hand at optimal ripeness to preserve the grape’s crisp acidity and subtle alpine aromatics.
Approach in the cellar
Vinification is entirely non-interventionist: whole clusters are gently direct-pressed, and fermentation takes place spontaneously with native yeasts in stainless steel tanks and neutral old barrels. There’s no temperature control, no fining, no filtration, and no added sulfur. The wine is left to rest on fine lees for a few months, gaining texture without losing its tension. On the nose, Y’en a 2023 opens with aromas of green pear, lime zest, crushed stone, and mountain flowers. The palate is clean, electric, and mineral-driven, with a dry, saline finish that lingers like alpine snowmelt.

In the cellar, Les Vins de Balema works with a philosophy of subtraction. There are no added yeasts, no fining, no filtration, and no sulfites.
