Wine History
Falco Peregrino 2022 is born from Bosco Falconeria’s long-standing experience in enhancing Sicilian native grape varieties. Made purely from Catarratto, it is the result of a project aimed at reinterpreting a classic Sicilian white in a contemporary style, preserving tradition and authenticity. Spontaneous fermentation and stainless steel maturation demonstrate respect for the land and organic practices, without added sulfur dioxide.
Vineyard Philosophy
The Catarratto grapes are cultivated according to organic farming principles, with great attention to soil health and biodiversity. The goal is to obtain healthy, ripe grapes that fully express the terroir of the Sicilian hills. Bosco Falconeria’s vineyard philosophy emphasizes nature’s respect, minimizing interventions and allowing the vines to grow in harmony with their surroundings.
Winemaking Approach and Varieties
The vinification of Falco Peregrino 2022 takes place in temperature-controlled stainless steel with spontaneous skin fermentation. About 9 months of steel maturation ensure freshness and structure, preserving citrus aromas and the varietal character of Catarratto. No sulfur dioxide is added, reflecting the winery’s commitment to quality and natural wine-making.

Bosco Falconeria: Tradition and Innovation in the Heart of Sicily
Winery History
Bosco Falconeria is located 60 km from Palermo, on the gentle hills overlooking the Gulf of Castellammare. Founded in 1933 as a small 12-hectare winery, it featured seven wine presses and employed up to thirty people during harvest. Family events, the agricultural crisis, and the 1968 earthquake led to a temporary abandonment. In the 1970s, the winery was renovated as a summer retreat, marking the beginning of a new productive era.
Vineyard Philosophy
The agricultural philosophy of Bosco Falconeria is based on respect for nature and sustainability. Since the 1980s, thanks to Antonio Simeti’s dedication and Mary Taylor Simeti’s curiosity, the winery has explored organic farming practices, anticipating trends that are now essential. The return to productive cultivation was not only a gesture of passion but a concrete commitment to preserve the land, with vineyards and diversified crops now covering almost 17 hectares.
Winery Approach
At Bosco Falconeria, tradition meets innovation. Grape processing follows techniques that respect the fruit and the environment, favoring natural fermentation and minimal intervention, always focused on quality and wine integrity. The winery is a place where history merges with modern experience, and every step, from vinification to bottling, reflects an organic and sustainable approach.
The Family Today
Today, Bosco Falconeria is a family-run winery, with Natalia and her husband Rami managing operations. Erissa and Besnik, originally from Albania, together with Saverio, form the operational core of the winery, keeping tradition alive while promoting agricultural innovation. The winery represents a perfect balance between historical roots and a forward-looking vision, continuing to produce high-quality organic wines.
