In the vineyard, the focus is on biodiversity and soil health, allowing the Sémillon and Sauvignon Blanc to fully express their freshness and elegance, typical of this appellation. Harvesting is done by hand to preserve the integrity of the berries, while vineyard management limits interventions to a minimum, ensuring the glass reflects the true soul of the Entre-deux-Mers.
Approach in the cellar
In the cellar, Jean Paul Deville’s goal is to preserve the natural aromas of the grapes. Fermentation and ageing take place entirely in stainless steel, enhancing the purity and liveliness of the fruit. The wine rests on its lees for 6 months, adding complexity and texture, followed by at least 3 months of bottle ageing. This stylistic choice results in a balanced white wine where Sauvignon Blanc brings freshness and drive, while Sémillon adds roundness and depth, delivering a harmonious, agile and persistent sip.
