Dolní Kounice, Czech Republic
This is a decidedly suitable area and in fact wine has been produced since time immemorial, using the native grapes of the place, in particular the Sankt Laurent and the Blaufränkisch.
Jiri’s goal is to convey the richness of this terroir to every single bottle: continental climate, soil formed in the Proterozoic period and therefore at least 2 billion years ago, and great ventilation.
Dva Duby’s idea of wine is absolutely natural, here any form of systemic chemistry is repudiated, even copper has been banned since 2007, in the cellar the wines are produced using native yeasts, long aging in oak and acacia barrels and without sulphites added during pre-bottling
