Marcillac Lo Sang del Pais 2020, Fer Servadou 100%
Manual harvest, maceration for 20 days then only steel. Fragrant and precise, bloody, with hints of iron and slate, paprika, dandelion and radicchio and Cassis on the finish. Slender tasting, medium-bodied, fruity and with polite tannins, bitter and spicy on the finish, with incredible persistence
Marcillac Vieilles Vignes 2020, Fer Servadou 100% – Two Bottles
From vineyards between 50 and 90 years old planted on steep slopes with two different types of soil: gravelly-limestone at the top and red Parmiano at the bottom. Maceration for 35 days in steel and subsequent maturation in large wooden vats for over 30 years. The wine is bottled two years after the harvest. Sentori of Cassis and Mint, black fruits and Licorice, then spicy and peppery notes. Generous and fresh palate, gentle tannins, medium body, great length and persistence
Marcillac, Aveyron, France
When Dominique (Philippe’s great-grandfather, current owner of the estate) purchased the Domaine du Cros in 1882, it was the beginning of a beautiful love story between a special terroir and a family of enthusiasts, the Teuliers (whose ancestors were already winemakers in ‘Aveyron).
Only in 1964 did the first bottling arrive, featuring Lo Sang del Pais, which became legendary throughout the Vallon de Marcillac.
Over the years, Domaine du Cros continues to grow exponentially, and now has 34 hectares of vineyards.
Since 2006, Julien, the fifth generation of winemakers at the Domaine, has carried on the family tradition with a clear impulse towards organic and natural products.
Aveyron, a little-traveled area in the South-West of France, hides small jewels like this Marcillac. Continental climate, terraces and red calcareous soil rich in iron characterize an isolated and sparsely populated area at the foot of the Central Massif, between mountains and high hills, which lives mainly from agriculture.
