Domaine d’Aurensan was founded at the end of the nineteenth century and consists of 7 hectares on clay-limestone soil in Tenareze, Caissagne.
The production process is carried out entirely by hand, from pruning to staking, from harvesting to vinification, following the principle of the minimum possible human intervention.
The aim is to have grapes destined to produce labels of quality and longevity.
The grapes are harvested when they are considered ripe for distillation. That is, when they have a high acidity and a low sugar level, the winemaking takes place with the sole use of native yeasts and without the addition of sulphites.
The humidity in the cellar is perfect for long and deep refinement, here the classic 420 liter pieces (Armagnac barrels) are used. These are obtained from oak wood and made directly in the company.
This refinement process is considered necessary for the Armagnacs of Domaine d’Aurensan to acquire their inimitable aroma.
