Diapiro 2021 – Tantaka Wines
The mineral soul of authentic Txakoli
In the heart of the Arrastaria Valley in the Basque Country, Juanjo Tellaetxe cultivates his vineyards naturally, on limestone soils at high altitude. The production area is that of the rare and historic Txakoli de Álava, where strong diurnal range, low yields, and manual harvests define the wine’s profile. This mountain microclimate gives rise to vibrant wines with strong aromatic personality.
Diapiro 2021 is crafted through minimal intervention in the vineyard and artisanal vinification in the cellar, using native yeasts and aging on fine lees. Made from 80% Hondarrabi Zuri and 20% Petit Courbu, it undergoes spontaneous fermentation and matures without clarification or filtration, expressing the raw purity of the terroir.
Bright straw yellow. The nose reveals tropical fruits, citrus and brioche. The palate is wide and fresh, silky in texture with a long, mineral finish.
A versatile food wine, perfect with shellfish, seafood, baked fish, fresh or blue cheeses, and aromatic vegetarian dishes. It ages gracefully for up to 5–6 years, gaining depth and roundness. Serve at 12°C with light aeration in the glass.

A natural, authentic, radically local project
Founded in 2017 by Juanjo Tellaetxe, priest and vigneron, Tantaka was born to revive the family vineyards in Artomaña, in the heart of the Arrastaria Valley. This is the coolest, most mountainous area of the D.O. Arabako Txakolina (Txakolí from Álava), where Juanjo works with minimal intervention and full respect for the land.
High-altitude vineyards and native grapes
The vines grow between 250 and 330 meters above sea level, surrounded by forests and Atlantic winds. The soils are alluvial with clay and limestone. Grapes include Hondarrabi Zuri, Petit Corbu, and Riesling, with small plots of Hondarrabi Beltza, all farmed organically and manually.
Spontaneous fermentation, no shortcuts
Harvest is done by hand, in small crates, with rigorous selection. After gentle pressing, fermentation occurs spontaneously with native yeasts in stainless steel tanks. Aging continues on the fine lees for several months, with no fining or heavy filtration.

Tantaka wines express the Basque landscape with tension, freshness, minerality, and verticality. No forced sparkle, no aromatic tricks – just pure, artisanal and identity-driven wines, deeply rooted in their origin. Production is intentionally small, aimed at those seeking real, living wines.
