In the vineyard: natural balance and geological identity
The La Grand Chaude parcel is located in the higher zones of the Côtes du Jura near Pupillin, where Chardonnay thrives on blue marl and low-active-limestone soils at nearly 400 meters altitude. Viticulture here is organic in practice, with no herbicides, no systemic chemicals, spontaneous grass cover, and only minimal tilling. The cool, breezy microclimate ensures a slow, steady ripening, preserving the grape’s natural acidity and aromatic definition.
In the cellar: precision through restraint
Vinification follows a philosophy of expression through simplicity. The wine undergoes spontaneous fermentation in 500-liter demi-muids, and is aged on fine lees for around 9 months. No filtration, no fining, minimal added sulfur. This Chardonnay is not about roundness, but about verticality, salinity, and terroir imprint, perfectly aligned with grape, soil, and time.
The luminous side of Jura Chardonnay
Clear straw yellow, with pale golden reflections. On the nose, it’s sharp and mineral, with hints of wet stone, lime, fine herbs, and fresh almond. The palate is dry, linear, and vibrant, with integrated acidity and a long finish marked by dried fruit and stony salinity.

Chantillon is rooted in the most agricultural and genuine part of the Aosta Valley, nestled between the slopes of Saint-Christophe and Quart. Here, altitude and thermal excursions shape a viticulture that refuses shortcuts, embracing the rhythms of nature, spontaneous biodiversity, and deep respect for the alpine terroir. The philosophy in the vineyard is precise: non-interventionist, chemical-free farming, where wine is born from healthy grapes and living soils. Vines grow between 600 and 800 meters above sea level, on terraced micro-parcels carved into the mountain, hosting native varieties such as Cornalin, Fumin, Petit Rouge, and Prié Blanc.
In the cellar: craftsmanship and instinct
The cellar work mirrors the vineyard ethics: no forced control, no technological shortcuts. Fermentations are spontaneous, and vinifications occur in small wooden vats, steel tanks, or fiberglass, depending on the vintage and grape. The wine expresses itself freely, sometimes wild, always honest. Aging follows a natural rhythm: months, sometimes years, without clarification, filtration, or unnecessary additions. What emerges from Chantillon is a raw and pure portrait of the mountains, a wine that speaks of wind, stone, and time, without ever raising its voice.
