2021 brought drastically low yields due to spring frost, but the quality is outstanding: crystalline, vibrant, precise. Grapes were hand-harvested at peak ripeness, following certified biodynamic practices.
Vinification: Precision with Patience
Fermentation occurs spontaneously with indigenous yeasts in oak barrels, without artificial temperature control. The wine is aged for around 18 months in new French oak, with utmost respect for transparency. No filtration is applied—only time and gravity.
