In the early 1900s, Salon firmly believed that the finest Champagne could be made solely from Chardonnay, without the need for blending with Pinot Noir or Pinot Meunier, which was the standard practice at the time.
With this vision, he began producing a Blanc de Blancs using exclusively grapes from Le Mesnil-sur-Oger, one of the most prestigious terroirs in the Côte des Blancs.
