Thoughtful Viticulture: Respecting Nature and Vines
The vineyards are farmed using agrobiological principles. Although not certified organic, the philosophy is deeply rooted in preserving the natural balance of the soil. No herbicides or chemical fertilizers are used, and all vineyard work is done manually. In selected plots, even horses are used instead of tractors to avoid compacting the earth.
Artisanal Winemaking: Precision Without Shortcuts
Fermentation takes place with indigenous yeasts in used oak barrels. Each plot is vinified separately to respect its unique identity. The wine is neither clarified nor filtered. It ages on the lees for over five years before disgorgement and is released without dosage. The result is a Brut Nature Champagne that is elegant, linear, and full of tension.
