Les Noues 2020 is not just another cuvée—it’s a clear statement from Frédéric Savart. Made entirely from Pinot Noir, and sourced from a single parcel in Écueil, this wine represents the deeper, more textured side of his artistry. While many of Savart’s wines are driven by tension and precision, Les Noues explores a broader, more sensual register, without ever losing its trademark clarity and energy.
The vineyard, planted on sandy-chalk soils, gives the wine a distinctive mineral backbone. And thanks to Savart’s minimal intervention approach, what you taste in the glass is a pure reflection of place, vintage, and the winemaker’s touch.
In the vineyard
Frédéric works his vines with deep respect for biodiversity and balance. Herbicides and synthetic treatments are strictly avoided. The vines are carefully tended throughout the year, and harvest is done entirely by hand, with rigorous selection. Yields are naturally low, ensuring that every bunch contributes only the most concentrated, expressive juice.
In the cellar
Vinification is entirely carried out in used oak barrels and demi-muids, allowing the wine to breathe and evolve gently. Fermentation happens with indigenous yeasts, and malolactic fermentation is deliberately blocked, to preserve the natural acidity and tension of the wine. After 10 months on lees, the wine is bottled and aged sur lattes until it’s ready to reveal its true character. Dosage is minimal—just enough to let the wine speak.
