La Guinguette – Aurélien Lemaire
Vineyard philosophy
The name says it all: La Guinguette is designed to celebrate conviviality and the light-hearted atmosphere of the traditional French guinguettes along rivers and in the countryside. The grapes come from 4.5 hectares recently converted to organic farming, cultivated with full respect for the environment and biodiversity. The generous 2022 vintage, abundant and high in quality, made it possible to craft this cuvée, born from an especially fruitful year.
Cellar approach
In the cellar, the goal is to enhance freshness and complexity through precise, respectful work. La Guinguette combines the first and last pressings of the grapes, with the pied de cuve prepared in barrels for extra structure and character. The first fermentation takes place in stainless steel on the lees, then the wine matures sur lattes until disgorgement in November 2024. The result is a Champagne with great aromatic breadth, vibrant energy, and a tense, delicately saline finish. Easy to drink, perfect for festive, relaxed moments.

Nose: generous, with white-fleshed fruit, candied citrus and subtle floral hints.

Aurélien Lemaire – A story of tradition renewed
A family legacy looking to the future
A story that repeats itself in Boursault: children who follow in their parents’ footsteps but shape a path that is deeply personal and true to themselves. This is the story of Aurélien Lemaire, who grew up in a family of Champagne producers active for over a century, Claude Lemaire. At a certain point, Aurélien chose to farm two of the family’s 6.5 hectares on his own, driven by the desire to explore new ways without forgetting his roots.
A new approach in the vineyard
After various experiences, including a formative period in Georgia, it was a visit to Sébastien Mouzon that inspired a turning point: a thoughtful, respectful agronomic approach focused on the vines, the soil and the Champagne landscape. Aurélien has converted the vineyards to organic farming, enhancing selected plots and boosting soil vitality to produce grapes that truly express their terroir.
Philosophy in the cellar
In the cellar too, the vision is clear: to craft Champagnes that are alive, energetic and full of character, made without shortcuts and with meticulous artisanal care. Spontaneous fermentation, long maturation sur lattes and a winemaking style that follows the vintage and the fruit without forcing, yield wines of vibrant freshness, depth and personality. Today, the future of this project is firmly in Aurélien’s hands, a symbol of a new generation of vignerons blending tradition with vision.
