Seven villages, one clear Champagne vision
This cuvée brings together fruit from four Grand Crus—Avize, Oger, Cramant, and Oiry—and three other villages: Avenay-Val-d’Or, Coligny, and Vauciennes. The goal is balance: intensity and clarity, structure and drinkability.
Pascal Agrapart’s approach goes beyond terroir. His winemaking is grounded in patience, transparency, and respect for natural processes. That’s why 7 Crus manages to be both accessible and incredibly refined.
Viticulture and winemaking
Living soils, unforced time, and minimal intervention
Agrapart cultivates his vines with natural methods, avoiding herbicides and systemic pesticides. The work in the vineyard is manual and deeply rooted in biodiversity.
In the cellar, only native yeasts are used for spontaneous fermentation. Part of the wine is vinified in stainless steel, part in used oak barrels. There’s no filtration, and the cuvée ages on its lees for 24 to 30 months. The dosage, around 7 g/l, enhances body without masking origin. The disgorgement date is clearly printed on each bottle.
Tasting

On the nose, 7 Crus is expressive yet refined—notes of citrus, green apple, white flowers, and a subtle touch of hazelnut.
