Vineyard Philosophy
The grapes used for Mesdì Bianco come from vineyards cultivated in the hills of Piedmont according to an agricultural philosophy focused on quality and respect for varietal character. Harvesting takes place at the ideal stage of ripeness to preserve freshness, aromatic intensity and fruit integrity. Careful grape selection ensures healthy and balanced fruit, providing the foundation for expressing the natural qualities of both Arneis and Favorita. The objective is to maintain the most authentic expression of the varieties and the territory while producing a wine that is fresh, clean and fully aligned with the winery’s production philosophy.
Winemaking Approach
Mesdì Bianco is produced through a process designed to preserve freshness and the aromatic qualities of the grapes. After harvest, the bunches remain for several days in cold storage at approximately 5°C, helping to preserve primary aromas and maintain fruit integrity. This is followed by gentle pressing and fermentation at a controlled temperature between 16 and 18°C. The different varieties are then managed separately: Arneis remains on its lees in concrete vessels with repeated bâtonnage, a practice that contributes additional complexity and texture, while Favorita is kept in stainless steel tanks to preserve its fragrance and aromatic vibrancy. The final blend results in a balanced, refreshing and highly enjoyable wine.
