Wine Story: Origins and First Expression
Cal Ron 2021 is born from the desire to interpret Garnacha Blanca from Penedès with authenticity and strong territorial identity. Grapes were harvested on September 3rd, 2020, gently pressed, and transferred into underground tanks to follow a natural fermentation and ageing process. This wine embodies the dialogue between the Penedès microclimate and the rural tradition of the Suriol family, developed in a historic castle where tradition meets experimentation. The early harvest aims to preserve freshness and acidity, giving the wine balance and depth while retaining finesse after ageing.
Vineyard Philosophy: Rooted Organic and Biodynamic Care
The grapes come from Can Suriol’s vineyards, farmed under certified organic practices and biodynamic principles applied for years. Vineyard management strengthens soil health and biodiversity, avoiding synthetic chemicals and enhancing the natural dynamics of the vines. Manual harvest and immediate pressing preserve aromatic integrity. Underground tanks provide thermal stability, ensuring steady spontaneous fermentations and a pure fruit profile.
Winemaking Approach: Spontaneous Fermentations and Mixed Ageing
After pressing, the must undergoes both alcoholic and malolactic fermentations with indigenous yeasts and bacteria in underground tanks. Ageing lasts around 4 months in chestnut barrels, underground tanks, and amphorae. Chestnut, a traditional local wood, adds subtle complexity without overpowering the fruit, while amphorae and tanks retain freshness. Bottled unfiltered and without added sulfites, it reflects a non-interventionist philosophy that values fruit purity and natural evolution.
Tasting Notes
Color: Bright straw yellow with greenish hues.
Nose: Elegant aromas of white flowers, fresh almond, yellow-fleshed fruit, and subtle hints from chestnut ageing.
Palate: Fresh and vertical entry, savory texture, soft finish, juicy persistence, and a delicate tannic touch from the wood.
Recommended Pairings
Ideal with fresh seafood, shellfish, and Mediterranean-style baked fish. Pairs well with Catalan and light Spanish dishes, poultry with delicate sauces, soft cheeses, roasted vegetables, and fermented preparations.

Can Suriol – Tradition and Biodynamics in the Heart of Penedès
A castle, a family, a wine philosophy
In Catalonia, at the heart of the Penedès region, stands Can Suriol, a boutique winery producing authentic wines in harmony with local tradition. Founded in 1985, it operates within a 15th-century castle in the village of Grabuac, 60 km west of Barcelona. Owned by the Suriol family since the 17th century, it is now led by Assis Suriol, winemaker and guardian of the family legacy.
Sustainability and respect for the land
The estate is energy self-sufficient thanks to solar panels and reuses vineyard waste to create natural compost, promoting agriculture in harmony with the environment.
Vineyards and grape varieties
30 hectares divided into 25 micro-plots, farmed organically since 1996 and biodynamically since 2010. Only native varieties are cultivated: Macabeu, Xarel·lo, Parellada, Garnatxa Blanca & Negre, Monastrell, Picapoll, Malvasia de Sitges, Ull de Llebre, Xarel·lo Vermell, Sumoll.
Winemaking
Hand-harvested grapes, spontaneous fermentations in concrete tanks, and no invasive additives. Wood, when used, is local chestnut from Montseny.
Production
Focused on Penedès and Cava, offering diverse styles deeply connected to the terroir. The Azimut project involves local growers in producing organic wines and sharing the proceeds.
