Vineyard Philosophy
The Mauzac Blanc grapes come from clay-limestone soils in Gaillac, grown with deep respect for nature and biodiversity. The vineyard management is biodynamic, aimed at maintaining healthy soils and expressing the pure terroir in every bunch.
Winemaking Approach
Bulleversant is produced using the ancestral method, with no added sugar for secondary fermentation or dosage liqueur. The wine matures on the lees, preserving freshness and aromatic complexity with minimal intervention, highlighting its natural expression.
Tasting Notes
The nose opens with floral, fruity, and fragrant aromas with mineral hints. On the palate, it is fresh, sharp, very drinkable, full-bodied, and persistent. An artisanal sparkling wine that impresses with originality and value.
