Winemaking and Grape Variety
After careful whole-cluster pressing, the base wine is aged for about ten months in small oak barrels, where it develops structure and complexity. Secondary fermentation takes place in bottle, followed by approximately 24 months of lees aging. This extended maturation contributes to aromatic depth, fine mousse, and creamy texture. The Schödl winery represents the evolution of a family deeply rooted in Austrian viticulture, where knowledge is passed down long before becoming a business. Mathias, Viktoria, and Leonhard grew up surrounded by wine culture, thanks to their father, a viticulture teacher in Klosterneuburg. Despite this strong influence, they initially pursued different paths, keeping the vineyards as a secondary activity, more emotional than professional. The turning point came in 2017, when they decided to fully commit to the family project. This led to international experiences that shaped their modern vision of wine. Leonhard’s time with producers such as Matassa and Testalonga had a lasting impact, steering the winery toward a more conscious and minimal-intervention approach. From that moment, Schödl became a focused and identity-driven project.
Vineyard Philosophy: Biodiversity and Respect for Nature
Work in the vineyard is central to the Schödl philosophy, guided by the idea of preserving natural balance and enhancing biodiversity. The vineyards are located in the Weinviertel, northeast of Vienna, an area known for its rolling hills and diverse soils. At altitudes between 200 and 250 meters, loess dominates, alongside clay and rocky components, creating ideal conditions for expressive wines. The continental climate, with warm days and cool nights, allows slow ripening while maintaining freshness and acidity. Organic farming is not just a choice but a necessity: the goal is to build a living ecosystem where vines, insects, and plants coexist naturally.
