Chianti produced with only Sangiovese, less than 2% Colorino and Canaiolo, practically a Sangiovese in purezza. Natural (spontaneous) fermentation. 30-day maceration on the skins. Aged for 1 year in steel + 4 years in cement + 1 year in the bottle. Surprising vintage, very underrated and incredibly harmonious. Both the acidity and the tannin are presented as polite and gentle on the palate. It is recommended to air 20–30 minutes before for an optimal tasting.

Chianti produced with only Sangiovese, less than 2% Colorino and Canaiolo, practically a Sangiovese in purity. Natural fermentation(spontaneous), 30 day maceration on the skins. Aged for 5 years in cement + 3 years in the bottle.< span id="page35R_mcid19" class="markedContent">The interpretation of the true Chianti soul. A few words are enough to interpret this wine. It is recommended for the public to taste this wine to discover the Chianti hills and the true soul of Sangiovese.

Chianti produced with only Sangiovese, less than 2% Colorino and Canaiolo, practically a Sangiovese in purity. Natural (spontaneous) fermentation. 30day maceration on the skins. Aged for 10 years in large chestnut barrels (approximately 8 hectolitres) + 4 years in the bottle. Spicy, aromatic and a complete bouquet. A meditation wine which, despite its 14 years of age, is also acidic and fresh (muchor more youthful). Suitable for those who taste not only with their palate but also with their sense of smell!

Set in the Montagnola Senese, a land of ancient and renowned winemaking tradition, the company produces great wines, including Chianti, with a tradition dating back to 1770.
Here we obtain grapes of great prestige destined for the winemaking of this sacred monster.
It consists of 12 hectares of vineyards, with vines up to 60 years old, with average productivity between 30 and 60 Q/ha
The company has been Demeter certified biodynamic since 1995, every moment of the production chain is treated with attention and respect towards nature and wine.
From the vineyard to the cellar and from the barrel to the bottle, many operations that we follow with care and attention, respecting the Wine and Nature.
In 1985 the Giglioli family discovered Biodynamic, applied immediately on a small plot of the vineyard, since 1986 it was applied onall 8 hectares of vineyards managed by the company in that period. This is because thebeneficial effects of Biodynamic were seen immediately,in factfor this reason the Giglioli family began towork all the hectares of vineyards with the Australian Biodynamic (Alex Podolinskymethod).
The production of bottles per year varies between 20000 and 30000 bottles per year.
Ithe most difficult task for the oenologists of the Casale farm is in the cellar: it’s not that big of a deals forming grapes into wine, is not even making wine best in the area, but rather it is to manage not to loseeven a shred of quality from the grapes, avoiding transformation errors and manage them as best as possible in the first phases of life. There are no filtrations, the wines are notclarified, just as they are notexogenous proteins or polyphenols are used in the cellar, they are not yeasts used during fermentations.
Once the grapes ferment and transform, the wine will be aged in three possible containers: steel, concrete or wood. It all depends on the type of grapes obtained in the vintage and on the decisions of the oenologists in the cellar
