Calaverna is a white wine produced by Andrea Pilar at Molino Vitelli, in Umbria and obtained from 100% Grechetto grapes; these are delicately pressed and destemmed and, using indigenous yeasts, ferment spontaneously in steel for 2/3 weeks. Before refining, the wine also undergoes malolactic fermentation spontaneously, depending on the vintage, and the fine lees are mixed. Always in steel the wine ages for a few months. Calaverna is a fresh and tasty wine, lively and intense with an inebriating floral and fruity nose, which we recommend in combination with Orvieto-style rabbit

The grapes are destemmed and softly pressed, fermentation takes place in steel tanks for two or three weeks in which frequent stirring is carried out on the fine lees. Depending on the year, malolactic fermentation is not carried out or is only partial. The wine ages in steel and in the bottle.
