The grapes, coming from red and calcareous lands, ferment spontaneously in terracotta amphorae and refine in concrete. The refermentation in the bottle takes place with only fresh must from the year following the harvest, without the addition of sugars or yeasts. It spends 56 months on the yeasts

Did you know that COS is the acronym of the initials of the names of the three founders of the company?
They are Titta Cilia, Giusto Occhipinti, Cirino Strano and they gave birth to COS in 1980.
The three inherited (for rent) the old family cellar of Giuseppe Cilia, father of Titta and vineyard.
In these 30 years of experience they have revolutionized Cerasuolo di Vittoria.
They profess the Biodionic “faith” and minimal intervention in the vineyard.
Theirs is also very interesting with the Spanish amphorae purchased now, 20 years ago
